Recipe 1: Mitthe Ande Sandwich with Raclette Cheese

A breakfast favorite in my house that is super easy to make and so delicious that you will make it a staple in yours! I genuinely don't know why we named it so in my home, as it has nothing sweet in it though its referred to as "Mitthe", however, the general consesus is that we make "Khatte Ande" with boiled eggs and this is kinda its opposite in the way the egg is cooked - hence "Mitthe" in Hyderabadi urdu (Meetha in Hindi) or sweet.


This is a very easy recipe. Literally take 10mins and you will enjoy it...that's a promise!



Recipe 1: Mitthe Ande with Raclette Cheese

Time Taken: 15 - 20mins

Recipe for: 3 - 6 people


All You Need Is:

6 Eggs

2 Pink Onions sliced

2 - 3 Green Chillies slit

4 Garlic pods

Curry Leaves (a handful)

Chopped Coriander

1 Tbsp Ginger Garlic paste

Spices - Turmeric, Red Chilli Powder, Salt

Raclette Cheese - sliced


How to Make Mithe Ande with Raclette Cheese:

In a pan fry cumin seeds, sliced onions, curry leaves, green chillies. Add the spices. Add some water and wait for it to slightly boil. Reduce heat and crack open your eggs. Cover and let eggs cook. Once a white film forms over the eggs, remove the cover and add the slices of cheese. Cover again and let it cook until the cheese melts. Garnish with coriander and a dash of Kashmiri chilli powder.


I usually serve it with hot parathas but this time I made it with the Raclette cheese hence, it only made sense to stuff a croissant with this delicious dish.
